Rice has been the main part
of our meals since older days. Thai children are given
rice as soon as they are weaned. They eat a regular diet
of rice ground with the bit of salt, or supplemented
with banana, until they can digest cooked rice grains.
In remote areas where nutritional problems exists,
nutritionist recommends supplementing protein by adding
legume to rice. As far as cooking is concerned, the
Thais are also quite inventive; we mix rice with other
ingredients to make delicious goodies. For example, we
cook rice, roasted sesame seeds and peanuts with sugar
and coconut milk on low temperature until all
ingredients mix well together. This is Krayasart, one of
the many supurb goodies with is high on protein and very
nutritious; or, if you cook glutinous rice in coconut
milk and add a bit of sugar, it will go deliciously with

sugar.
In the food
industry, rice flour is used to make various kinds of
goodies, breakfast cereals and supplement baby foods
fortified with protein from animal and plant sources.
Many ready-to-eat meals such as snacks have rice as main
ingredient; as you can see, rice is inseparable in
home-cooking and industrial products.
If we are look at its
nutrition, rice contains 7% of protein contents and 70%
carbohydrate which is a good source of energy. In
general, a Thai consumes about 200-400 grams of rice per
day on average; therefore ,she or he gets 15-28 grams of
protein daily.
In addition, abundance of
vitamins B1, B2, NIACIN; minerals and fiber are found on
bran or outer layer of unpolished rice. Therefore,
under-milled or brown rice is recommended as it contains
more vitamins and minerals, and some health conscious
Thais have now switched to it.
Thai people have
different ways of cooking rice. Some families cook rice
by boiling it and draining out the milk-like liquid
which has high vitamin contents to give the young, the
aged and the sick members of the family. Some cook rice
by steaming and there by the vitamins are kept intact.
The modern electric rice cooker makes easier to steam
rice.
